Small Batch Vegan Chocolate Cookies

 

Makes 6 cookies

This is the ultimate small-batch recipe for those days when you need just a little chocolate treat to get you through, better yet they are vegan and grain-free!

This recipe is a fan favourite, simply because it only needs a handful of ingredients to create a moreish cookie. You can easily use cacao powder for a more rich and chocolatey flavour, then add whatever chocolate you want on the top of the cookie!

I love using ghee in this recipe (clarified butter) which is essentially butter without the milk proteins. This was a huge staple when I was strictly dairy free, but I still love buying it as to me it has a similar flavour profile of browned butter.

Ingredients

1 C almond flour

1/2 tsp baking soda

2 Tbsp cocoa powder

2 Tbsp maple syrup

3 Tbsp ghee/vegan butter/ coconut oil melted

Vanilla and salt to taste

Method

Combine all of the ingredients in a medium bowl. Let the mixture rest for 2 minutes so the flour can hydrate. The mixture may seem a bit wet, but roll into balls using slightly wet hands (I made 6). Place these balls onto a lined baking tray, leaving space between them. Flatten ever so slightly and press a square of dark chocolate in the middle.

Bake for 10-12 min at 180 C. Sprinkle flaky salt over, let cool (helps texture!) and then enjoy! Keep airtight, I prefer eating these straight from the freezer!
