vegan double choc cookies

 

Makes 6 cookies

this is the ultimate small batch recipe for those days when you need just a little chocolate treat to get you through, better yet they are vegan and grain free! I personally like eating them straight from the freezer!

Ingredients

1 C almond flour

1/2 tsp baking soda

2 Tbsp cocoa powder

2 Tbsp maple syrup

3 Tbsp ghee/vegan butter/ coconut oil melted

Vanilla and salt to taste

Combine all together. Let sit for 2 min. The mixture may seem a bit wet, but roll into balls using slightly wet hands (I made 6). Flatten ever so slightly and press a square of dark chocolate in the middle. Bake for 10-12 min at 180 C. Sprinkle flaky salt over, let cool (helps texture!) and then DEVOUR! Keep airtight, I prefer these straight from the freezer!
