Chickpea Flour Cookies: Nut-Free, Gluten-Free
Makes 6 cookies
This is the perfect recipe for anyone who is nut-free, or who wants a delicious small-batch cookie recipe that ticks all the boxes! Chickpea flour is a perfect high protein, grain-free flour that is inexpensive also - which makes it an ideal cookie if you ask me!!
Ingredients
1/4 C ghee/oil melted and cooled
1/4 C granulated sugar of choice
1 egg room temp
1/2 C chickpea flour
2 Tbsp cocoa powder
1/4 tsp baking soda
1/4 tsp vanilla
Pinch of salt
Method
Beat the sugar and oil together until well combined (if you have a mixer use this for a minute!) - add the egg and mix again. In a separate bowl mix all of the dry ingredients together, then combine and mix into the wet. The mixture will seem on the wetter side but should be able to be scooped and rolled into 6 balls. (Do NOT taste the mixture it will taste gross due to the chickpea flour raw!) press down slightly and bake on a lined tray at 180 C for 8 minutes. As SOON as they come out of the oven press a square of chocolate on (I love a square which is around 95% cacao ) . Let cool before removing from the tray and sprinkling with salt! Keep airtight in the fridge, I personally keep these in the freezer.
