Chocolate Protein Packed Energy Bites

 

Makes 12 balls

okay, these energy balls are in a league of their own! Packed with healthy fats, a small amount of carbs and a high-quality protein source, these decadent chocolate energy bites are the perfect pick-me-up. It’s so important when creating a snack that you are thinking about your blood sugar, otherwise you only end up more hungry from a blood sugar crash!

Each ball has around 5 grams of protein, so combined with the fat, it will help balance the sugar from the dates! I love dates as a natural sweetener, but if consumed in a high quantity they can be quite disastrous for your blood sugar levels!

I’ve used my favourite bone broth protein powder from Mitchells, so feel free to sub but you may need to add a little water etc so you end up with a ball that can be easily pressed together x

Ingredients

1/3 Cup dates (60g) - soak these in 1/3 Cup hot water

1/2 Cup desiccated coconut

1 Cup Walnuts

1 tbsp cacao/cocoa powder

3 Tbsp hulled tahini/runny nut butter

4 heaping Tbsp Mitchells Chocolate bone broth protein powder (use LARA15 for a discount)

optional - 1/2 cup chopped chocolate or choc chips (I recommend 70% plus) with a tsp of coconut oil, melted in the microwave - for drizzling over balls

Method

Add the dates to a small bowl and soak in the hot water for 10-20min.

Drain the excess water, then add the dates, coconut, walnuts, cocoa powder, tahini and protein powder to a small food processor.

Pulse together until the dates and walnuts are broken down and it resembles a mixture that can be easily rolled into balls. If needed add another 1 tbsp of tahini if too dry, or another tbsp of cocoa if too wet.

Evenly roll the mixture into 12 balls and place on a parchment paper lined plate to set in the fridge. Place in the fridge for an hour if coating in chocolate, or store in a ziplock bag and place in the freezer (or fridge if you like things softer) if eating as is!

If coating in chocolate, melt the chocolate (around 1/2 Cup) with a tsp of coconut oil in a medium bowl and microwave until smooth. Dunk each ball into the chocolate, toss with a fork to evenly coat and place on a cooling tray (so the chocolate can drip off) with parchment paper underneath while you coat the rest. Sprinkle with flaky salt.

Place these in the fridge to set, then store them in the fridge or freezer (I like the freezer as it creates the perfect texture!)
