cookie dough slice

Makes 1 square dish (9 large squares/ 12 small)

This is the ultimate no-bake treat. It’s packed with healthy fats and incorporates protein powder (which is optional but I highly recommend), so you feel satiated and energised after having a slice. I love the taste of hulled tahini so this is the perfect recipe to highlight that flavour, but if you are a peanut butter fan - go for it!

Ingredients

cookie dough base

1 Cup smooth & runny nut butter/tahini (I love hulled tahini)

2 tbsp honey/maple

1 serving vanilla bone broth protein - try some using LARA15 online!

(sub 1 tbsp almond flour + 1 tsp honey)

1 Cup almond flour

1 tsp vanilla extract

1/4 Cup coconut flour

1/4 Cup chocolate chips

Mix all together in a large bowl until a dough mixture is formed, add the chocolate chips and press into a lined loaf tin!

topping

1/2 C dark chocolate (I use over 70%)

2 tbsp smooth nut butter/tahini

Melt together in a small ramekin in 30-second increments until smooth and glossy! Pour over the dough and sprinkle with some flaky salt. Refrigerate for 2 hours until firm. Slice into squares and enjoy!

Keep stored airtight in the fridge or freezer.
