Easy and Delicious Cassava Flour Banana Donuts

I love bananas in all types of baked goods, but it works wonders in this recipe when combined with cassava flour. This is an excellent recipe to make when craving something a little comforting and what is more fun than decorating donuts?
You may or may not be familiar with cassava flour, but it comes from the root of cassava. It’s a perfect flour for when you want something similar to wheat. I love using the cassava flour from GoodFor, a refillery store, but you can easily find it online.
Ingredients
1/2 C cassava flour
1/2 tsp baking soda
1/2 tsp cinnamon
1 large banana (1/2 C)
1/2 C smooth nut or seed butter (tahini makes this recipe nut-free)
1/2 C non-dairy milk (not full-fat coconut milk)
2 Tbsp maple syrup
1 tsp Apple cider vinegar
pinch of salt
Method
Combine the dry ingredients in a bowl, then separately mix the wet ingredients in another bowl. Combine the two and mix well, it should be thick and goopy! Divide into the greased silicone donut pan - should fill 6 donut holes and bake at 180 C for 25 min. They should be golden and a knife should come out clean!
Let cool before pouring a glaze (1/3C dark chocolate, 2 tsp melted coconut oil - melt and combine in the microwave) over top. Refrigerate for 5 minutes to form a shell! Top with naturally coloured sprinkles for decoration. Store airtight, best consumed fresh.
