cassava flour banana donuts

 

Makes 6 donuts

I love banana in all types of baked goods, but it works wonders in this recipe when combined with cassava flour. This is an excellent recipe to make when you are craving something a little comforting and what is more fun then decorating donuts?

Ingredients

1/2 C cassava flour

1/2 tsp baking soda

1/2 tsp cinnamon

1 large banana (1/2 C)

1/2 C nut or seed butter (tahini makes this recipe nut free)

1/2 C non dairy milk

2 Tbsp maple syrup

1 tsp Apple cider vinegar

pinch of salt

Combine the dry ingredients in a bowl, then separately mix together the wet ingredients in another bowl. Combine the two together and mix well, it should be thick and goopy! Divide into the greased silicone donut pan - should fill 6 donut holes and bake at 180 C for 25 min. They should be golden and a knife should come out clean! Let cool before pouring a glaze (1/3C dark chocolate, 2 tsp melted coconut oil - melt and combine in the microwave) over top. Refrigerate for 5 minutes to form a shell! Top with naturally coloured sprinkles for decoration. Store airtight, best consumed fresh.
