Easy Paleo Banana Bread Freezer Bars

 

Makes 1 loaf tin, 6 to 8 bars

I know, I know … it’s quite the concept. But have you ever found yourself eating the batter of banana bread? If so, this recipe is for you entirely. Thing cookie dough texture with a banana bread flavour - with chunks of chocolate in each bite. It is a fan favourite here on Feedinglara, be sure to use the ripest bananas you can find!

I like using cashew butter or almond butter in this recipe, I find that it gives the most cookie dough-like flavour. If you need to ripen your bananas quickly, I like turning my oven to 150C and placing them on a tray - take them out once they turn black! Let them cool slightly before using them in the recipe!

Ingredients

2 very ripe bananas mashed (add up to a Tbsp of maple syrup to the dough if your bananas aren’t sweet enough!)

4 Tbsp smooth nut or seed butter

2/3 C almond flour

4 Tbsp coconut flour

1 tsp vanilla extract

Chopped chocolate for the inside + some (1/2 a bar) melted with a tsp of coconut oil for the top!

Method

Mix mashed bananas and nut butter until smooth. Add in almond flour and coconut flour until well combined. Mix in the rest of the ingredients and press the mixture into a lined loaf tin. Place in the freezer till frozen (at least an hour). Pour over melted chocolate (melted with tsp coconut oil), sprinkle over some flaky salt and place back in the freezer to set 🥰 let thaw for a few minutes before slicing into bars!! I made 6 large bars. Hot tip - heat the knife before cutting to get cleaner slices! Keep airtight in the freezer 🫶
