3 ingredient nut butter cookies

 

Makes 12 small biscuits

If you are a fan of baked goods requiring only 3 ingredients - you’re in luck! This recipe uses a smooth nut butter, a liquid sweetener and a little bit of baking soda. That’s it! I call this my magic cookie dough because at first the mixture looks like it will be a liquid disaster BUT then all of a sudden after mixing vigorously, it forms a dough! I love that you can add whatever add-in you would like (but I can never seem to go past chocolate chips)! This recipe is perfect for all dietary requirements, as it’s egg, dairy, grain and refined sugar-free!

Substitutions

If you can’t eat nuts, have no fear! You can use a thick seed butter however I would highly recommend checking out my minimal ingredient Tahini Cookies which uses very similar ingredients but in different amounts!

Ingredients

3/4 Cup smooth nut butter (like pb or almond - I use the versions that just contain the nut and some salt)

1/3 Cup honey/maple (use LARA20 for a sneaky discount on the best honey from Egmont Honey online!)

1/4 tsp baking soda

chocolate chips of choice

Method

Preheat the oven to 180C.

Combine all in a medium bowl, and mix with a fork or whisk until a dough forms & comes away from the edge of the bowl. This may seem like a very wet mixture to start with, but trust the process and keep mixing! Mix in the desired amount of chocolate chips (measure with your heart).

Form 12 small balls, place on a lined baking tray & press down slightly. Bake for 10-12 minutes until golden. Let cool for 5 minutes before removing from the tray and enjoying (with a sprinkle of flaky salt).

Store airtight in a container at room temp, or keep in the freezer.
